Sharper in flavour than black olives as they are picked while still unripe, they also contain less oil giving them a firmer texture. While often used for stuffing with peppers, in particular pimento, they are also excellent with cheeses, garlic and other fillings. They pair well with herbs and are a good salad olive for green salads either stuffed or sliced into halves.
